Quality certification of animal products, an incentive for the development of livestock farming: the case of Corsian Brocciu cheese. The transformation from a simple, French "Appellation d'Origine" (stamp oforigin) to an "Appellation d'Origine Contrôlée" (guaranteed stamp of origin) as in the case of Corsican Brocciu cheese, seriously disrupts the strategy of the various partners concerned by the product which benefits from this transformation. As a result, quality which was initially defined by experts, is constructed by the actors themselves. Approached as a social construction, certification is a continuing process of negotiation which unites producers around the validation and recognition of the quality of their product. It can be a lever for developing livestock farming in areas with heavy natural constraints, such as Corsica, reversing a strictly defensive logic to a strategy ofproduct identity valorisation and of market control.
La transformation d'une Appellation d'Origine "simple" en Appellation d'Origine Contrôlée, donne lieu à de profonds bouleversements dans la stratégie des différents partenaires concernés par le produit qui en bénéficie. D'abord définie par les experts, la qualité devient alors construite par les acteurs. Appréhendée comme une construction sociale, la certification est un processus continu de négociation qui solidarise les producteurs autour de la validation et de la reconnaissance de la qua lité de leur produit. Elle peut constituer un levier de développement de l'élevage dans des régions à fortes contraintes comme la Corse en renversant la logique strictement défensive en stratégie de valorisation de l'identité d'un produit et de maîtrise du marché.
