Potential of fluorescence spectroscopy to predict different fatty acid contents in beef meat: comparison between front face and synchronous methods

The present study aimed to investigate the potential of using synchronous (SFS) and front face (FFS) fluorescence spectroscopy coupled with Partial Least Square (PLS) for the determination of fatty acid composition of beef meat. PLS models with leave-one-out cross-validation technique were considered in the present study. The models performances were analyzed principally by the R² and the ratio of standard deviation to root-mean-square error (RPD) factors. The R 2 and RPD factors obtained with SFS were higher compared to the ones obtained with FFS. The results showed that SFS succeeded to predict saturated (R² CV ≥ 0.84; RPD ≥ 2.5) and mono-unsaturated (R² CV ≥ 0.70; RPD ≥ 1.80) fatty acids and failed to predict poly-unsaturated (R² CV ≤ 0.58; RPD ≤ 1.54) fatty acids
