Meat consumption is often considered as involved in the occurrence of some diseases. The role of the meat consumption in metabolic diseases (obesity, metabolic syndrome, diabetes) and cardiovascular diseases has not been established, but they could be associated with dietary style. Data concerning colorectal cancer suggests the direct deleterious role of an excessive meat consumption, especially when cooked impropoerly. Some nutritional and genetic factors may play a cancer-protective role. Consumption of a moderate amount of meat cooked in a healthy way holds an important place in a balanced diet.
