Les biomarqueurs d’un muscle pour predire la tendrete et la teneur en lipides des carcasses de l’aop maine anjou

The aim of this study was to predict tenderness and intramuscular fat (IMF) content of the French PDO Maine Anjou by the
measure of the relative abundance of accurate candidate biomarkers of these traits. Another objective was to choose among
five muscles, one on which the abundance of biomarkers could be measured in order to predict the tenderness and the IMF of
the others. The results show that the abundance of 4 proteins of the Triceps brachii combined with data on slaughter age and
finishing period duration, allowed an accurate prediction of the affiliation group of tenderness and IMF.
